Green Peas Rice

Ingredients 
2 cup Basmati Rice
2 cup green peas
2 green chilly in small pieces
1/2 ts ginger in small pieces
2" cinnamon stick
4 tbspoons ghee
4 cup water
salt to taste

Method
  • Heat ghee on medium flame in a cooker.

  • Add green chilly ginger and cinnamon.

  • Fry for a few seconds.

  • Add the rice fry for 2 minute now add green peas, water and salt.

  • Mix well.

  • Lit the cooker till one whisle then cook on low flam till all water evaporates.

  • Separate rice with fork.

  • Serve hot with chutny or vegetable.

Potato (Aloo) Raita

Ingredient 

4 medium size boiled and peeled potatoes(Aaloo)
2 bowl curd(lightly beaten)
1 tspoon rosted cumin seed powder
1/2 tspoon lemon juice
1/4 tspoon pepper
1/2 tspoon sugar to taste
1/4 tspoon red chilly powder
1 pinch hing
1/4 tspoon cumin seed
1/2 tspoon green chilly in small pieces
1 tspoon ghee
green coriander leaves

Method
  • Boil potatoes and cut into very small cubes.
  • Now add the potatoes in curd and mix well.
  • Now add cumin seed powders, salt, sugar, pepper powder ,lemon juice in curd and Mix well.
  • Now heat ghee in small pan at reduced flame.
  • Add hing and cumin seed when it cracks then pour this ghee in curd.
  • Garnish with finely chopped green coriander,green chilly and cumin seed powder.
  • Serve with rice or parota or chappati to your dear ones..

Aloo Kofta Curry

Ingredients

120 gm boiled and mash potato(aloo)
240 gm bottle gourd(loki),grated
120 gm paneer
2 green chilli
1 tsp ginger in small pieces
2 tbsp coriander leaves
salt to taste
24 gm corn flour
300 gm any thick gravy
30 gm khoya
50 gm spinach leaves



Method

1. Grated gourd boil in the water and drain it.

2. Now grate paneer,mix with mashed and grated gourd.add salt,pepper powder and cornflour.

3. Knead it like dough and form into small balls.

4. Stuff the balls with khoya, cashew and raisin.

5. Deep fry the kofta till golden brown.

6. In separate pan heat the butter and add copped green chilli and ginger the spinach paste.

7. Boil for 2-3 minutes.

8. Add thick gravy and little water cook for 3 minutes.

9. Add kofta cook for 2 minutes. garnish with coriander leaves.

10. Serve with rice.

Sambar Rice

Ingredients :

1½ bowl uncooked rice
1½ bowl tuvar dal
6 bowl water
2 bowlof vegetables (potatoes,pumpkin,radish, brinjals and beans)
1 lemon size ball of tamrind
1 tbspoon oil
1 tspoon mustard seeds
6 tbspoons ghee
salt to taste
for masala
2 tbspoon chana dal(bengal gram)
2 tbspoon split black gram(urad dal)
3 tbspoon coriander seeds
3 tbspoons grated coconut
4 dry red chillies
2" cinnamon stick
6 curry leaves
½ turmeric powder
1 pinch hing

Method :
  • Roast the nine ingredients of the masala in a little oil.
  • Cool and then dry grind. Keep aside.
  • Soak the tamarind ball in the hot water and extract the juice.
  • Boil the water in a big pan add the tuvar dal to it and cook till it is half-done.
  • Now, add the rice, the spice mix powder, chopped mixed vegetables and salt.
  • Keep on low flame for about 10 minutes.
  • Now add tamarind paste.
  • Heat the oil in a pan.reduce flame.
  • Add the mustard seeds when it crecked.add curry leave fry it for few secend
  • Pour this over the rice mixture.
  • Add the ghee to this mixture. Allow to simmer on a low flame
  • Stir continuously for 15 minutes till the rice is fully cooked and all the ghee is used up.
  • Garnish with coriander leaves before serving.
